  1. Do these new pizza chains use impingement ovens to make their pizzas? If so, no sale. If you want to make shitty pizza, impingement is the way you go about it. Hell, brick oven really isn’t that great – sounds great but really dries out the crust and blackens too easily.

    These new chains are filling a need no one asked for. Thankfully in NJ where I’m from, they will surely be scarce. Nothing beats a pizza made by a bunch of goombas not speaking english. It’s a stereotype but fuck, they know how to do it. I’ve had pizza from all over the country and really, nothing comes close.
